piston vs. sprinkler?

If you are going for performance, I'd go with a piston.

I guess it depends on your size, the build of the actual valve is cheaper, but depending on your size you pilot could make the cost be more.

Buying valves is more expensive then building them yourself, depending on what you use to build one, ofcourse.
Especially large valves of 2" and up will drain your wallet.
On top of that, a custom built valve can perform better then a commercial one. Especially the flow of a commercial valve (sprinkler in this case) is usually crappy compared to a piston valve's.
Note that a piston valve also needs a pilot, which CAN be a sprinkler valve.
