Running at 500 psi it didn't leak, haven't tried it at 800. I don't know how freezing issues with CO<sub>2</sub> might affect sealing.
Taking the valve apart, there is a plastic tube holding the rubber seal the stem presses against in place, this might be prone to distortion if subjected to excess pressure and might need to be replaced with a stronger metal tube.

yea mine is metal... but it didn't seal at 800..
I tried putting in a spacer to increase spring tension... But then the spacer was too long, couldn't even operate the valve...
And now I can't get the spacer out its jammed in there so tight LOL.
I'll take a picture of internals and slap it up here in a bit.
Do you think if i turned the pipe 90 degrees so it was horizontal it would still be able to operate successfully? I don't see why not..

It might be worth looking into pressure washer handles or ball valves at these pressures.
