Basically, if i fill up my chamber with 100 psi of air pressure. Is there a way to find out how many newtons of force are acting on the ammunition right as the valve is released?

Force is the pressure of air in your barrel multiplied by the base area of the projectile. Using GGDT knowing enough valve parameters you can roughly determine the pressure in your barrel at any given point of projectile travel, and therefore be able to calculate the force being exerted on it.

Go get D_Hall's GGDT program. It will model your gun, pressure and ammo and give you pretty darned good results.
